About the Recipe

Carbonara is a silky, creamy egg and cheese sauce with mouthwatering crispy pancetta or bacon combined with al dente pasta. The dish is blessed with fresh cheese and black pepper (optional). This meal is all you need to satisfy your pasta cravings.

Once you make this easy Authentic Italian Pasta Carbonara (no cream) recipe, you won't need any other one! 

Ingredients

Serves: 2

Time: 30 mins

  • 350 g (12 oz) of spaghetti
  • 200 g (7 oz) of guanciale
  • 4 whole medium eggs (1 egg per serving)
  • 100 g (1 cup + 1 tablespoon) of grated Pecorino Romano cheese
  • ground black pepper


Method

  1. Make cheese and egg mixture
  2. Add guanciale to pan fry until crispy.
  3. Cook pasta
  4. Combine pasta to the pan when removed from heat. Slowly add egg mixture (add a splash of starchy pasta water- if needed)
  5. Toss until glossy, slightly creamy, and fully blended.
  6. Fold in guanciale  and serve hot!
